Pregnancy is a period of rapid growth and development in which the nutritional needs of both the mother and the developing fetus increase significantly. A balanced diet during pregnancy provides adequate energy, proteins, vitamins, minerals, and fluids required for healthy fetal growth, maternal tissue expansion, hormonal changes, and preparation for breastfeeding. Recipe 1: Vegetable Moong Dal Khichdi Ingredients: * ½ cup rice * ½ cup split yellow moong dal * 1 small carrot, chopped * ½ cup green peas * ½ cup spinach, finely chopped * 1 small tomato, chopped * 1 teaspoon ghee * ½ teaspoon cumin seeds * A pinch of turmeric powder * Salt as required * 3 cups water * Fresh coriander leaves for garnishing Method of Preparation: Wash the rice and moong dal thoroughly and soak them for about 20 minutes. Heat ghee in a pressure cooker and add cumin seeds. Once they crackle, add chopped tomatoes and sauté for a few minutes. Add carrots, peas, spinach, turmeric powder, and cook for another two to three minutes. Add the soaked rice and dal, mix well, and pour in the required amount of water. Add salt according to taste. Close the pressure cooker and cook for three to four whistles. Allow the pressure to release naturally. Garnish with fresh coriander leaves and serve warm with curd or buttermilk. Nutritional Value: Vegetable moong dal khichdi is a wholesome one-pot meal containing carbohydrates, proteins, dietary fibre, vitamins, and minerals. Rice provides carbohydrates that supply energy needed during pregnancy. Moong dal is an excellent source of high-quality plant protein, essential amino acids, folate, iron, magnesium, and zinc, which are important for fetal growth and maternal tissue repair. Spinach contributes iron, folic acid, calcium, vitamin A, vitamin C, and dietary fibre. Carrots are rich in beta-carotene, which is converted into vitamin A and supports fetal vision, immunity, and cell growth. Green peas provide protein, fibre, vitamin K, folate, and antioxidants. Tomatoes are a good source of vitamin C and lycopene, improving iron absorption and supporting immunity.
