Induction motors are widely used in dairy plants for operating equipment such as pumps, compressors, agitators, cream separators, and refrigeration systems. These motors work on the principle of electromagnetic induction, where electric current in the stator winding produces a magnetic field that induces current in the rotor, resulting in mechanical rotation. A three-phase induction motor operates on the principle of a rotating magnetic field. The stator of the motor contains three windings placed 120 degrees apart from each other. When a three-phase alternating current is supplied to these windings, three alternating magnetic fluxes are produced. These fluxes combine to form a rotating magnetic field that revolves around the stator at synchronous speed.
