Section B - Practical Activities (40 marks)
There are four exercises in this section. These exercises are based on Practical Manual 1& 2.
Answer all four.
1. Do you include sprouted or fermented foods in your diet? Describe one sprouted and one fermented
dish commonly consumed in your region? (Refer to Activity 3 of Practical Manual Part-I). (10)
2. Identify any two families .in your neighborhood, one belonging to the low income group (Family A)
and the other to the high income group (Family B). Conduct a diet survey (preferably for two to three
days) to find out the food purchases of these two families. Note the expenditure on different food
items as indicated in the following table and evaluate what percentage of the total income (of the two
families) is spent on food expenditure? (Refer to Activity 2 of Practical Manual -2) (10)

3. St. Marry’s School has decided to supply nutritious mid-day snacks to its students on reasonable rates.

(क) उपयुक्त उदाहरण देते हुए हमारे शरीर में भोजन के कार्यों का संक्षेप में वर्णन कीजिए। 
(ख) निम्नलिखित पोषक तत्वों के खाद्य स्रोतों और हमारे शरीर में उनके कार्यों को लिखें:

2. प्रस्तावित दैनिक मात्रा की अवधारणा और संतुलित आहार नियोजन में इसके महत्व की व्याख्या करें।

(क) आहार नियोजन को प्रभावित करने वाले कारकों को सूचीबद्ध करें। आहार योजना में किसी एक कारक की भूमिका को संक्षेप में लिखिए। 
(ख) एक शालापूर्व बच्चे की मां को अपने बच्चे के लिए आहार की योजना बनाते समय किन विशिष्ट विचारणीय बिन्दुओं को ध्यान में रखना चाहिए। 
4. निम्नलिखित के सन्दर्भ में आहार में ऊर्जा और प्रोटीन के साथ अन्य किन पोषक तत्वों की आवश्यकता है और क्यों? वर्णन कीजिए।

(क) मोटापे से ग्रस्त वयस्क महिलाओं के लिए आप के द्वारा दी जाने वाली आहार सिद्धांतों व आहार संशोधनों की गणना करें। 
(ख) एक समुदाय में विटामिन ए की कमी की रोकथाम के लिए आप क्या उपाय करेंगे? 

(क) घरेलू पैमाने पर भोजन के संरक्षण कि एक विधि और उसके सिद्धांतों की संक्षेप में व्याख्या कीजिए। 
(ख) दूध और दुग्ध उत्पाद खरीदते समय आप किन बातों को ध्यान में रखेंगे, उन्हें सूचीबद्ध करें।

(क) आईसीडीएस कार्यक्रम के तहत गर्भवती और स्तनपान कराने वाली महिलाओं को दी जाने वाली प्रमुख सेवाओं का वर्णन कीजिए। (2)
(ख) ऊपरी बांह के मध्य भाग की परिधि (एमयूएसी) पोषण स्तर के आकलन की एक उपयोगी संकेतक है। इस कथन की पुष्टि करें। एमयूएसी कट-ऑफ के आधार पर बच्चों को कुपोषण के विभिन्न श्रेणी में वर्गीकरण करें।

भाग ख – प्रयोगात्मक अभ्यास (40 अंक)

इस भाग में चार अभ्यास हैं। ये अभ्यास प्रयोगात्मक नियमावली पर आधारित हैं। सभी प्रश्नों के उत्तर दीजिए।

1. क्या आप अपने आहार में अंकुरित या खमीरीकरण खाद्य पदार्थों को शामिल करते हैं? आपके क्षेत्र में आमतौर पर खाए जाने वाले एक अंकुरित और एक किण्वित व्यंजन का वर्णन करें? (प्रैक्टिकल मैनुअल पार्ट: की गतिविधि 3 देखें)
